Fresh Sub Rolls
What do you do when you have leftover meatballs ??? Make meatball subs of course!!
I cannot explain to you how delicious these were and how excited we were to eat them.

Fresh Sub Rolls

The perfect fluffy, herby cheesy topped roll, perfect for meatballs or whatever you choose!
Ingredients
- 400g lukewarm water
- 3 tsp dried yeast
- 3 tsp caster sugar
- 2 tsp salt
- 20g olive oil
- 640g bakers flour
- 2 tsp bread improver
To Top
- Grated cheese,
- Dried italian herbs or fresh rosemary finely chopped
- Flaked salt
- Melted butter or oil
Instructions
Thermomix Method
- Add water, yeast and sugar to bowl. Mix 10 seconds/speed 3.
- Allow to rest for a few mins.
- Add bakers flour, oil, salt and bread improver (if using). Mix 6 seconds/speed 6. Knead 5 mins.
- Dough will be a little sticky. Use oil on your hands to handle. Form into a nice round ball. Place dough into your Thermomat or bowl. cover with cling film. Allow to prove in warm place until doubled in size. (Approx 45 mins to 1 hour) Divide dough into 6 portions. Gently roll out to make a long log. Place on baking tray with mat or baking paper, at few cm apart. Brush with a little oil or melted butter. Sprinkle with herbs and and grated cheese. Allow to prove again for 20 mins while oven pre heats to 180 degrees. Bake in oven for 20-25 minutes. Remove from oven and place loaves on cooling rack.
- You can cover loaves with a tea towel while they cool for a soft top but I didn’t bother.
- Fill with meatballs or your favourite sub ingredient
Notes
We filled ours with meatballs, pickles, jalapeno, spinach and kewpie. I used the Chicken meatball with creamy tomato sauce from Cookidoo but used beef mince.
You can easily make meatballs ahead of time/day before.
Rolls best made fresh.
