Healthy Apple Muffins

I came across a recipe and knew I had to make my own version. Getting sweetness from fruit and without refined sugar (you could definitely reduce or use an alternative too) these really hit the spot and perfect for breakfast on the go. 

I love the taste the wholemeal flour gives them but you could use normal flour or even try with spelt or gluten free flour (I haven’t tried but think it would work well) 

Eat within 2 days or freeze for an easy grab breakfast or snack on the go

Healthy Apple Muffins

Who doesn’t love a good muffin! I love them anytime of day, sweet, savory, warm from the oven, the best!! Even better when it’s full of nutrients too!

Ingredients

  • 2 green apples peeled and finely chopped
  • 3 ripe bananas mashed
  • 1/3 cup maple syrup
  • 2 eggs
  • 1/2 cup diced dried apple
  • 1/3 cup sultanas (optional)
  • 3 TBS chopped walnuts or pecans
  • 2 1/4 cups wholemeal SR flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon

Instructions

Method
  1. Preheat oven to 180
  2. Add all wet ingredients to a bowl and mix
  3. Add all dry ingredients to a separate bowl and mix
  4. Combine together mixing until only just combined. Place large tablespoons on a greased muffin tin (makes 12)
  5. Cook for 25 mins until golden
