Rich, chocolatey and just the right amount of rum. Perfect for a sneaky snack or on the Xmas table to share with your loved ones.

Ingredients

  • 330g Arrowroot biscuits
  • 150g Cadbury dark 45% cooking chocolate
  • 5 tablespoons cocoa
  • 2/3 cup dedicated coconut
  • 520g condensed milk
  • 1 teaspoon vanilla
  • 5 tablespoons rum
  • Chocolate sprinkles or coconut for rolling
  • Optional extra - 1/2 cup sultanas

Instructions

  1. Crush biscuits using your Thermomix, blender or smash up in a zip lock bag with a wooden spoon until fine crumb. place into larger bowl
  2. Grate chocolate in your Thermomix, blender or cheese grater. Add to bowl with biscuits
  3. Add all other ingredients (including sultanas if using) and mix until combined.
  4. Place bowl into fridge for 15 mins to firm up slightly before rolling.
  5. Sprinkle extra coconut or chocolate sprinkles onto a flat plate or bowl.
  6. Roll heaped teaspoons of mixture into small balls and roll in coconut/sprinkles.
  7. Put into an airtight container in fridge to chill for at least 2 hours or overnight. Keep stored in the fridge.
  8. Will last up to a month in the fridge (if they are lucky to last that long)

Notes

You can use whatever alcohol spirit you like - sherry, brandy, bourbon ect 

If you don’t want to use alcohol, substitute with water. 

I split the batch in half so have half with sultanas and half without. (Roll one in chocolate sprinkles and one with coconut to tell them apart) 

With the leftover biscuits and condensed milk, I make a kid friendly version for kids and family who don’t like rum. Just halve the recipe. If I don’t need to make a kid friendly version and want to use all the ingredients up (eg condensed milk and biscuits) then I just do a 1 1/2 recipe batch.
