A perfectly glazed Christmas ham makes the perfect centrepiece for your Christmas spread. Ever wanted to know the secret perfect ham glaze and didn’t know where to start? Well here it is! The perfect sweet, salty, tangy glaze for your Christmas ham.

Ingredients

  • 4-5kg bone-in fully cooked ham
  • 1/3 cup water
  • 125g butter
  • 3/4 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 4 cloves garlic, smashed

Instructions

Thermomix method
  1. Get the ham out of the fridge 2 hours before you want to cook.
  2. Once 1.5 hours has passed, preheat the oven or BBQ to 150°C. Make sure you move rack in oven to make a space (if using BBQ I recommend placing a heat proof rack or another tray upside so that the bottom of ham tray doesn’t get direct heat from burner)
  3. Trim away the rind and discard ensuring you leave the fat on. (Or have the butchers do this for you) Using a sharp knife score a 1-inch-wide diamond pattern by cutting on the diagonal over the entire ham.
  4. Place the ham in the baking tray and pour 1/3 cup of water into the base of the pan and cover the ham with two pieces of foil. Place into oven or BBQ for 30 minutes.
  5. While ham is cooking, prepare your glaze.
  6. Place the butter in a small saucepan over medium heat until melted and then cook for 2 minutes (making sure not to burn). Add in the brown sugar, honey, mustard, cinnamon and cloves, stirring to mix together well until the brown sugar has completely dissolved.
  7. Reduce heat to low and add in the garlic. Cook for another two minutes, while stirring until the glaze just begins to simmer, (don’t let it boil) then set it aside and let cool. (keep in the saucepan)
  8. After 30 minutes baking time, carefully remove the ham from the oven/BBQ and increase the temperature to 220°C. Take off the the foil and discard.
  9. Slowly pour 1/3 of the glaze all over the ham, brushing in between the cuts to evenly cover. Return to the oven/BBQ uncovered for 15 minutes.
  10. Take out of oven/BBQ and glaze with another 1/3 sauce as well as using a spoon to pour over some of the dripping from the pan. Return to oven/BBQ for another 15 mins.
  11. Set aside the last 1/3 glaze in the saucepan (you will add some drippings into it when ham is cooked)
  12. Glaze again this time with drippings from the pan. Return to oven/BBQ for another 5-10 mins.
  13. Repeat this process once or twice more or until the ham has formed a golden brown delicious crust.
  14. Once you are happy with depth and glaze, remove from heat and let rest for at least 30 mins before serving.
  15. With the 1/3 glaze left in saucepan, you want to add some of the drippings from the ham pan (make sure you add the thicker sauce at bottom not just fat/oil) until you get a nice glaze the consistency of warm honey. Feel free to warm slightly before serving
  16. Place glaze in a bowl to serve with your ham. Slice ham and drizzle with that delicious glaze.

Notes

Keep any leftover glaze to heat and serve with leftover ham. Delicious in a toasted sandwich with cheese or on a piece of sourdough.
