SPICY VODKA PASTA

The most delicious simple spicy pasta ready in just 10 minutes

Ingredients

  • 2 Tbsp olive oil
  • 5 cloves garlic, finely diced
  • 1 brown onion, finely diced
  • 1/2 cup tomato paste
  • 1 cup cream (add extra 1/4 cup if needed)
  • 2 1/2 Tbs vodka
  • 1/2-1 tsp red pepper flakes (or more if you like spicy)
  • 500g dried pasta (Rigatoni used here but Pappardelle/Fettuccine also delicious)
  • 40g butter
  • 1/4 cup grated parmesan cheese
  • Basil to serve

Instructions

  1. Get all your ingredients out and have everything diced and measured ready to go before you start cooking.
  2. Bring a large saucepan of water to the boil and add some salt.
  3. In a large frypan, heat the olive oil on medium heat then add the onion and garlic and stir cooking until soft. (make sure pan is not too hot or onion will burn)
  4. Add tomato paste and keep stirring to cook until it changes slightly darker in colour (few minutes)
  5. Add pasta to boiling water and cook until al dente (pasta still slightly firm when you bite) This rigatoni took approx 8 mins.
  6. Add in the vodka to tomato paste mixture and stir through for 1 min
  7. Add the cream and stir to bring together
  8. Add in the red pepper flakes (you can leave out if you don’t like spicy but I recommend a little for flavour)
  9. Season with salt and pepper.
  10. Add prawns and cook 2 mins, stirring occasionally
  11. Add in the butter, parmesan cheese and stir for two mins until everything is combined.
  12. When the pasta is done, don’t drain! We are going to use some of that pasta water
  13. Using a slotted spoon or tongs, add pasta to the sauce. You also want to add some pasta water about 1/4-1/2 cup to the sauce, enough to make it delicious and saucy
  14. Serve immediately topped with fresh basil, extra parmesan and chilli flakes
