The Most Delicious Pumpkin Soup
Such a simple recipe that hits the spot every time.
It's a delicious thick and creamy soup so if you prefer thinner then simply add extra water before serving.
This will be a favourite you'll come back to year after year.

I used the Cookidoo recipe as a base but then you know I like to add my spin to it and make it even more delicious!
Ingredients
- 1 brown onion
- 4 cloves garlic
- 40g butter
- 1 carrot - chopped into 4
- 1 large potato - peeled and chopped into 4
- 1 small sweet potato - chopped
- Pumpkin - skin off and chopped (enough to take weight of all vegetables to 1000g)
- 1 tablespoon vegetable or chicken stock paste
- 400g water (Feel free to add extra water if you like soup thinner)
- 70g cream
- Salt and pepper to taste
Instructions
Thermomix Method
- Add onion and garlic to Thermomix chop 3 seconds/speed 7
- Add butter. Cook for 4 mins/120 degrees/speed 1
- Clear scales and add all vegetables including pumpkin to reach 1000g
- Chop 10 seconds/speed 7
- Add vege stock and water and cook 20 mins/100 degrees/speed 1
- Add cream and blend for 1 min starting at speed 5 and increasing to speed 9
- Season with salt and pepper to taste and serve hot.
Traditional Method (No Thermomix)
- Dice onion and garlic and add to large deep pan with butter
- Sauté off for a few minutes until onions start to cook and soften
- Chop all vegetables to 3cm pieces
- Put a large bowl over set of scales and add all vegetables and then pumpkin to reach 1000g
- Add to pan with onions and garlic and add vege stock and water.
- Gently simmer until vegetables are all soft 20-30 mins (You may need to add 100g or more water)
- Add cream and use stick blender to purée soup together.
- Season with salt and pepper to taste and serve hot.
Notes
When using a regular oven I like to prick base with a fork a few times and bake until lightly golden before topping and returning to oven.
