Ultimate chicken sandwich

Serve it on fresh bread, crunchy sourdough, wraps, crackers, literally whatever. 

My secret ingredient is dill pickles and pickle juice but this can be left out if you don’t like it.

Oh if you make one thing this week... and every week make sure it’s delicious chicken sandwich. It’s like the perfect combo of salty, creamy, crunchy, herby, chicken goodness.

Ingredients

  • Large handful fresh roasted chicken or shredded chicken
  • 1-2 tbs whole egg Mayo
  • Few pieces celery
  • 2 green shallots
  • 1 cucumber dill pickle (Always fresh brand)
  • Fresh parsley or dill (or even better, both)
  • Salt and pepper
  • Lettuce
  • Butter
  • Bread or cracker of choice

Instructions

Method
  1. Shred or pull apart chicken into smaller pieces.
  2. Finely dice celery, shallots, dill pickles and herbs and add to a bowl with chicken
  3. Add 1-2 tablespoons of mayo and salt and pepper to taste and mix.
  4. What I also like to add is a few teaspoons of pickle ‘juice’. If you don’t like pickles then you can leave out but makes it taste even more delicious. Give a good mix and taste and add extra salt, pepper, mayo if needed.
  5. Butter you bread or wrap and add lettuce of choice and top with thick layer of chicken mixture.
  6. Enjoy!
