Best ever Banana Bread

This has to be one of mine and my families favourite things to eat! Simple and delicious! After lots of baking and testing this is a recipe I’ve created and perfected. It’s so easy! In a Thermomix it will take you 1 minute to mix and then the oven does the rest. 

Can be baked as a loaf or put into muffin tins. 

Feel free to add chocolate chips or nuts to the top or our favourite, Nutella!

Best ever Banana Bread

Delicious on the day or over the next few days toasted with lashings of butter. Promise me you’ll make it! I know you will love it!

Ingredients

  • 125g butter - softened
  • 100g brown sugar (3/4 cup)
  • 2 eggs
  • 2 ripe bananas (cut into pieces)
  • 1 teaspoon Vanilla
  • 60g Golden syrup (3 tbs)
  • 255g SR flour (1 + 3/4 cups)
  • 1 teaspoon ground cinnamon
  • Pinch salt

Instructions

Thermomix Method
  1. Preheat oven to 180
  2. Add the butter and brown sugar and mix for 5 seconds/speed 5
  3. Add all other ingredients except flour and mix 5 seconds/speed 5
  4. Add flour and mix 10 seconds speed 5
  5. Put into loaf tin lined with baking paper and cook for 45 to 55 mins (until golden and a skewer comes out clear)
Traditional Method (No Thermomix)
  1. Mix butter and sugar together until creamy (roughly 5 mins) with a mixer, hand held beater or hand whisk.
  2. Add eggs, syrup, salt, vanilla and mix until combined
  3. Put bananas into a separate bowl and mash with a fork
  4. Add banana, cinnamon SR flour to other ingredients and mix with a spoon until just combined
  5. Put into loaf tin lined with baking paper and cook ffor 45 to 55 mins (until golden and a skewer comes out clear)
  6. Muffins will only take 20-25 mins.

Notes

Muffins - place in to 12 hole muffin tin. cook for 20-25 mins. 


Toppings/Mix ins -

Nutella - add a few teaspoons of Nutella in to top of muffins/loaf before cooking

Choc chips - mix 1/2 cup of choc chips of choice into batter before cooking
