Ingredients
- 300-400g jasmine rice
- 1 Tbs oil or butter
- 500g pork mince
- 1 tsp freshly grated ginger
- 1 tsp freshly grated garlic
- 1/2 tsp salt
- 3 Tbs Hoisin sauce
- 1 tsp sambal oelek (chilli sauce) plus extra to serve
Optional extras in pork mixture
- 1/2 tsp sesame oil
- 1 tbs soy sauce
To serve
- Grated carrot, diced cucumber, diced lettuce, spinach or cabbage, diced shallots, fresh coriander and/or mint, sliced chilli
- Sambal and kewpie mayo
Instructions
- Place rice on to cook as per instructions in your Thermomix, rice cooker or saucepan.
- Place a fry pan on to medium to high heat and add olive oil (and sesame oil if using) Place in your pork mince, grated garlic and ginger, salt, sambal if using and stir. Keep moving around pan and breaking up mince to separate and to absorb all the moisture. Cook and continue to stir until it goes toasty and golden (will take roughly 10 mins) You really want to cook it well as add to the flavour.
- Add hoisin sauce (and soy if using) and stir for another few mins. Take off heat and set aside while rice cooks and you chop veggies.
- Once rice is cooked, add to bowl with mince and salad.
- Add kewpie mayo and sambal to top of mince and enjoy.
