Banana muffins but better! Who doesn't love some Biscoff and goes perfectly with banana.These will be a family favourite!
Ingredients
- 125g butter - softened
- 100g brown sugar (3/4 cup)
- 2 eggs
- 2 ripe bananas (cut into pieces)
- 1 teaspoon Vanilla
- 30g Golden syrup (1 1/2 Tbs)
- 50g Biscoff spread + extra 3 Tbs for top once cooked
- 255g SR flour (1 + 3/4 cups)
- 1 teaspoon ground cinnamon
- Pinch salt
Instructions
Thermomix Method
- Preheat oven to 180
- Add the butter and brown sugar and mix for 5 seconds/speed 5
- Add all other ingredients except flour and mix 5 seconds/speed 5
- Add flour and mix 10 seconds speed 5
- Put into muffin tin lined with papers and place into oven for 20-25 mins
- Once muffins are cooked, place extra 3 Tbs biscoff spread into cup and melt in microwave for 20 seconds or until melted and runny. drizzle over the top of muffins with a spoon and enjoy while warm. Leftovers can be frozen
Traditional Method (No Thermomix)
- Mix butter and sugar together until creamy (roughly 5 mins) with a mixer, hand held beater or hand whisk.
- Add eggs, syrup, salt, vanilla and mix until combined
- Put bananas into a separate bowl and mash with a fork
- Add banana, cinnamon SR flour to other ingredients and mix with a spoon until just combined
- Put into muffin tin lined with papers and place into oven for 20-25 mins
- Once muffins are cooked, place extra 3 Tbs biscoff spread into cup and melt in microwave for 20 seconds or until melted and runny. Drizzle over the top of muffins with a spoon and enjoy while warm. Leftovers can be frozen
Notes
Muffins - place in to 12 hole muffin tin. cook for 20-25 mins.
Toppings/Mix ins -
Nutella - add a few teaspoons of Nutella in to top of muffins/loaf before cooking
Choc chips - mix 1/2 cup of choc chips of choice into batter before cooking
