Christmas Shortbread

It’s not Christmas without delicious Christmas shortbread. 

Super quick to make with only 4 ingredients.

Keep them simple sprinkled with sugar or drizzle with chocolate.

These will be a Christmas favourite.

It’s not Christmas without delicious Christmas shortbread. Perfect for gifts, to enjoy over the Xmas weekend, to place on the Xmas table setting or simply enjoy with your morning cuppa. These will be a Christmas favourite!

Ingredients

  • 250g very cold butter, cut into pieces
  • 60g corn flour
  • 100g castor sugar
  • 300g plain flour

Instructions

Thermomix method
  1. Preheat oven to 180
  2. Place sugar into mixing bowl and mill for 10 seconds/speed 9
  3. Add cornflour, plain flour and butter.
  4. Mix for 10 seconds/speed 6. Mixture will be crumbly
  5. Knead 1 minute on dough setting
  6. Turn out dough onto Thermomat or baking paper and roll out if you want to cut into shapes or simple roll into a log or rectangle (using baking paper) and cut slices Key is to not overwork the dough. If dough is too soft to cut you can pop into fridge for 10 mins to firm up
  7. If you don’t want to decorate after cooking, sprinkle with sugar and prick with a fork
  8. Place into lined baking trays and cook for 20-25 minutes (until just golden, time depends on size of cookies and every oven is different)
Traditional method

  3. Mixture will be crumbly as first but mix until comes together into a dough
  4. Turn out dough onto Thermomat or baking paper and roll out if you want to cut into shapes or simple roll into a log or rectangle (using baking paper) and cut slices. Key is to not overwork the dough. If dough is too soft to cut you can pop into fridge for 10 mins to firm up
  5. If you don’t want to decorate after cooking, sprinkle with sugar and prick with a fork

Notes

Optional addition 

Melt chocolate and half dip cookies or drizzle with both dark and milk chocolate . Add sprinkles and place into fridge to set. If you add chocolate you will need to store in the fridge
