Garlic Butter Prawns

Fresh green prawns and a few simple ingredients for a garlic butter sauce and you have a delicious meal.
Perfect as a dish for Christmas lunch but we also love it just served simple with sourdough (for dipping into that buttery garlicky sauce) and a fresh salad. Or make it a meal with steamed rice.

Garlic Butter Prawns

Ingredients
- 12 large green prawns with heads on
- 100g butter
- 2 Tbs olive oil
- 4 cloves garlic
- 1/4 teaspoon salt
- 2 teaspoons lemon juice
- Pepper to taste
Instructions
- First you need to clean and prepare prawns. Leave head and shell on. Turn over so you are cutting through the belly of the prawn up to the head. Cut through the meat and split in half (trying not to cut through the shell on other side) Turn over and press down to make flat. Turn back over and devein (take out the poo) and any other gunk. Place aside and repeat process with all the prawns
- To make the sauce - Add butter and oil to saucepan and melt slowly over low heat. Once melted let cook for a minute or 2 but don’t boil. Add garlic and let it very gently cook for 2 minutes.
- Remove from heat and add lemon, salt and pepper and stir.
- Turn prawns so flesh side is up and add some of the garlic sauce to each prawn.
- Heat BBQ to medium high and place prawns down on the side for about a 2-3 minute then turn over and cook for a further 2 minutes or until prawn had just gone from translucent to white.
- Take off BBQ and coat in more sauce.
- Serve with a sprinkle of salt, parsley and a side of fresh lemon. Delicious
