Chai Snickerdoodles

The most delicious, chai spiced buttery soft cookie surrounded in cinnamon sugar. 

The perfect soft, round and chewy cookie (don’t want no flat cookies here thanks) 

These are make especially delicious and special with the addition of chai. The perfect mix of spices to compliment these cookies.

Chai Snickerdoodles

Like Christmas in a cookie! If you haven’t make snickerdoodles before then you are in for a treat!

Ingredients

  • 3 cups plain flour
  • 2 tsp cream of tartar
  • 1 tsp bicarb soda
  • 1/2 tsp salt
  • 225g softened butter
  • 1 cup caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 Tbs chai addict concentrate
Cinnamon sugar topping
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 180°C
  2. Line two large cookie sheets with greaseproof paper or baking mats.
  3. Mix the flour, cream of tartar, bicarb soda, and salt together in a medium bowl.
  4. In a large bowl add the softened butter and sugar and mix with a hand mixer or stand mixer for about 2 mins until creamy. Add the egg, vanilla and chai addict. Mix with beaters until combined. Add 1/2 the flour into butter mixture and stir together, then add the rest of the flour. Stir gently, will come together (you can used the beaters for 10 seconds or so to bring last bits of flour together if needed)
  5. Mix the topping ingredients together in a small bowl and set aside
  6. Roll dough into medium balls (about 40g each) Roll all the dough balls in cinnamon-sugar topping once and then I like to roll them a second time in cinnamon sugar to make sure fully coated. Place on a tray making sure to leave a few cm gap.
  7. Makes about 26 cookies. Set aside remaining sugar.
  8. Place into oven for approximately 12-14 minutes until lightly golden (bottom of cookie should be golden) let sit to cool before moving to a plate and sprinkling with extra sugar

Notes

If you don’t have Chai addict concentrate yet, (you need this on your life!) you can replace with an extra tsp of vanilla, 2 Tbs milk and 1 tsp cinnamon. 

You can freeze cookie dough balls uncooked for up to 3 months. Let defrost for 30 mins before rolling in cinnamon sugar and baking as above. You can also freeze the baked cookies for up to 2 months.
