Pulled Pork Burgers with Coleslaw

Pulled pork is the perfect set and forget. Throw it on and come back hours later to juicy delicious pulled pork. 

Make or buy some brioche buns, throw together a coleslaw and you have a delicious dinner everyone will love

Pulled Pork Burgers with Coleslaw

Perfect juicy pulled pork made with simple easy ingredients that will be a family favourite for years to come.

Ingredients

Pulled Pork
  • 1.5kg pork roast with skin on
  • 1 onion, diced
  • 4 cloves garlic diced
  • 3 1/2 Tbs paprika
  • 1 Tbs salt
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup red wine vinegar
  • 2 Tbs olive oil
  • 1 tsp dried thyme
  • Good pinch pepper
  • Optional - 1/2 tsp cayenne pepper
Colesalw
  • 1 grated carrot
  • 1/2 grated green apple
  • Small piece red onion finely diced
  • 1/6 green cabbage finely diced
  • 1 Tbs sour cream
  • 1 Tbs egg Mayo
  • Optional extra
  • 1 Tbs pickle juice
  • 1/2 dill pickle diced

Instructions

Pulled Pork
  1. Dice the onion and garlic and add to the bottom of the slow cooker.
  2. Remove half the fat from pork.
  3. (*see note below about removed fat)
  4. Cut pork in half and add on top of onions and garlic.
  5. In a bowl mix together all the remaining ingredients then pour marinade over the pork
  6. Turn the slow cooker on to low and cook for 7 to 8 hours or until the meat is tender enough to be easily shredded with tongs.
  7. Shred meat apart with fork and tongs and stir.
Coleslaw
  1. Mix together and add extra Mayo if needed
To Serve
  1. Serve on toasted brioche buns or wraps with coleslaw, grated cheese, sliced pickles and smokey bbq sauce

Notes

Pork fat - Either throw away the fat you cut off or add to tray, dry off with paper towel and sprinkle with salt and place into fridge overnight. Place under hot oven grill to crackle up and add to your burgers for some crunch
