One Bowl Choc Coconut Slice

This slice is the perfect chocolate slice. Chewy, crumbly, rich, perfect warm or cold and just so damn easy. 

I have been making this slice since I was a little girl and it is still an absolute favourite.

Just try not to eat half of it warm from the pan. Hope you love it as much as we do

One Bowl Choc Coconut Slice

1 bowl, 1 spoon, 5 minutes prep and it’s in the oven to bake. You top the slice with icing straight from the oven so within 30 minutes you can be eating it. Doesn’t get much quicker then that!

Ingredients

SLICE
  • 125g butter - melted
  • 1 cup brown sugar (loosely packed)
  • 1 egg - beaten lightly
  • 1 teaspoon vanilla
  • 1/2 cup plain flour
  • 1/4 SR flour
  • 1/2 cup coconut
  • 2 tablespoons cocoa
ICING
  • 10g butter - melted
  • 1 cup icing sugar
  • 2 tablespoons cocoa
  • 2 tablespoons hot water
  • Extra coconut to top

Instructions

Thermomix Method - Slice
  1. Preheat oven to 180 degrees C
  2. Melt butter 80 degrees/2 mins/speed 2
  3. Add egg, sugar and vanilla and mix 5 seconds/speed 5
  4. Add both flours, coconut and cocoa and mix 10 seconds/speed 4
  5. Line a slice tin with baking paper and spread slice mixture.
  6. Bake for 25-30 mins
Thermomix Method - Icing
  1. Add all ingredients into bowl and mix 10 seconds/speed 3
  2. While slice is baking, mix all icing ingredients in a bowl
  3. When slice is cooked, top immediately with icing and sprinkle with extra coconut
  4. Let cool slightly before slicing
Traditional Method
  1. Preheat oven to 180 degrees
  2. In a bowl mix together butter, sugar, egg and vanilla and stir.
  3. Add both flours, cocoa and coconut and mix together
  4. Line a slice tin with baking paper and spread slice mixture.
  5. Bake for 25-30 mins
  6. While slice is baking, mix all icing ingredients in a bowl
  7. When slice is cooked, top immediately with icing and sprinkle with extra coconut
  8. Let cool slightly before slicing
