Ingredients

  • 1 1/4 cups plain flour
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • Pinch of salt
  • 1/2 cup sourdough starter discard
  • 1 cup milk
  • 1 egg
  • 1 tsp Vanilla
  • 30g melted butter + extra for frying
  • oil for fry pan
  • To serve - Maple syrup, berries, sliced banana and crispy bacon

Instructions

  1. Mix dry ingredients in a large bowl and set aside
  2. Mix wet ingredients together in a small bowl
  3. Pour wet ingredients into dry ingredients
  4. The most important part is that you don't over mix the batter, mix until just incorporated and then stop! It's okay if it has a few small lumps, if you over mix the pancakes they won't be as fluffy
  5. Heat up a fry pan on low to medium heat and add 10g butter and some oil. Using 1/4 cup measure, place 1 small round of batter into pan (about 8cm wide) to test out the heat first. Place a lid if you can over pan as helps pancakes fluff up. Cook until few bubbles form and then flip to cook other side
  6. Once you have pan heat to your liking place about 3 pancakes in pan at a time
  7. Once cooked, place in Thermoserver lined with baking paper or under a tea towel to keep warm while you repeat with remaining batter
  8. Best served with lashings of butter, maple syrup, fresh berries and bacon on the side
  9. Refrigerate leftover pancakes and reheat before eating

Notes

I like to use a 1/4 measuring cup to dispense batter so pancakes are similar size and cook evenly

Placing a lid over pan will help pancakes become fluffier (you can use a baking tray if you don't have a lid big enough but be careful as will get hot)
