Beef Mince Tacos
So to follow up on the Taco seasoning I shared this week, here in my beef mince taco recipe. Super simple and so easy.
I have been making this for years and is a firm favourite and repeat in our house.
Serve as tacos, burritos, salad bowl, in baked potato, nachos, toasted sandwich, with eggs on toast. So many options!

Beef Mince Tacos

Super simple and so easy. I have been making this for years and is a firm favourite and repeat in our house.
Ingredients
- 1 onion
- 4 cloves garlic
- Olive oil
- 500g regular beef mince
- 1 carrot
- 1/2 zucchini (optional)
- 2 Tbs taco seasoning
- (refer recipe on my page)
- 3 Tbs tomato paste
- 1/4 cup water
- 1 can drained kidney beans
- 1 Tbs vege stock paste
Instructions
- Finely dice onion and garlic and add to fry pan on medium heat with drizzle of oil and stir occasionally for 2-3 mins.
- Increase heat to high and add mince and use spatula to ‘chop’ up mince to seperate so no chucks. You want to cook until all mince is browned and then give another 2 mins to cook off moisture and give mince a chance to really cook (you can add a little more oil here if needed)
- Add in grated veggies (I chop in Thermomix/food processor to get a nice fine grate) and cook for 2 mins
- Add taco seasoning and stir. Add paste and veggie stock and half water and stir. Continue to stir and cook for 5 mins added extra water if needed
- Taste and add more seasoning/salt/water if needed.
