Sweet, tangy and delicious lemon curd. This is so quick and simple and packs a delicious punch!
So great on icecream, toast, added to desserts or just on a teaspoon straight into your mouth
All you need is a bowl and whisk, 4 ingredients, 4 minutes and you’re good to go!

Sweet, tangy and delicious citrus curd made in minutes in the microwave with just 1 bowl.

Ingredients

  • 100g Eggs (2 eggs)
  • 100g Caster sugar
  • 100g butter, softened
  • 100g Lemon or lime juice

Instructions

  1. Add all ingredients into a heat proof bowl and whisk loosely together.
  2. Put into the microwave for 30 seconds and then stir. Repeat this step for 30 second blocks, stirring between each time. Stop once curd changes in consistency and becomes creamier and thicker. Max total of 8 times in 4 minutes.
  3. Give a final whisk and put into a sterilised jar. Will still be runny but with thicken as it cools.
  4. Once cooled keep in the fridge for up to 4 weeks

Notes

This would probably work with just 50g of each ingredient too if you wanted to make less. Would need to reduce cook time
